selling locally sourced produce, signposting next to each item the positive impacts on the environment customers are making by chosing a greener way to shop. Customers can choose from a range of fresh locally grown fruit and take it to a staff member who will blend their sorbet for them on the spot. Fruit could be provided by local; farm East Coast Organics who focus on a more environmentally friendly way of working. The honey that is needed to make sorbet could be sourced from Edinburgh Honey.Co which is “Sustainably Sourced – Supporting ethical beekeeping and local communities.” The bakery section of the shop could be sourced from The wee Boulangerie, an artisan bakery operating on a zero waste policy who donate unsold goods to charities etc. All companies are located within Edinburgh. Any produce remaining after a few days before stock is replenished could be given for free or donated to charities. The money taken for goods would contribute to running costs.
